How to Make the Best Colombian bandeja paisa vegan style this Hispanic heritage month.

Vegan bandeja Paisa

Get ready to crave more after tasting this delicious vegan Colombian dish that serves two.

 

List of Ingredients

  • 1 recipe frijoles (Colombian red beans)

  • 1 recipe arroz blanco (white rice)

  • 1 recipe hogao (tomato onion sauce), for serving 

  • Arepas Colombianas

  • Vegan sausages 6 or 12, depending on size

  • 2 ripe avocados, cut in quarters


BBQ tofu

  • 400g firm tofu, divided into 12 slices

  • 4 tbsp BBQ sauce

  • 4 tbsp soy sauce

  • cumin

  • salt and pepper


Fried ripe plantain

  • 2 ripe plantains, diagonally sliced yellow plantains, **pick the ones who have a darker peel close to going black**

  • vegetable oil for frying



Let’s Get Cooking


  • Marinate Tofu:

    • Mix BBQ sauce, soy sauce, cumin, salt, and pepper in a container.

    • Add tofu slices and mix well.

    • Let marinate for a couple of hours.

  • Prepare Sides:

    • Cook red bands (frijoles) and white rice.

    • Make arepas, but divide the dough into 6 balls instead of 4 for smaller arepas.

    • Fry plantains until golden brown in hot oil. Drain on paper towels.

  • Cook Main Dishes:

    • Fry marinated tofu until almost black. Drain on paper towels.

    • Cook vegan sausages.

  • Assemble Bandeja Paisa:

    • Divide white rice, Red Beans (frijoles), BBQ tofu, vegan sausages, fried plantains, arepas, and avocado onto 2 plates.

    • Serve with hogao sauce.
